HACCP is the abbreviation for the English "Hazard Analysis Critical Control Points". Translated, it is a hazard analysis with which "critical control points" are to be identified and controlled.
Measures are then specified and introduced at these CCP's according to the risk analysis results in order to reduce the risk potential.
